This is the story of the Giacco Company which began more than 80 years ago, thanks to the construction of the first oil mill by Giuseppe Giacco on a territory, the Calabrian one, which has allowed and still allows the harvest of the Ottobratica cultivar olives. , Cassanese and Sinopolese.
The olives are pressed on the same day as they are harvested in Ferdinando Giacco's company oil mill.The harvest generally takes place from October 1st to November 30th through mechanical and manual procedures, exclusively in the family's land.
The milling of the olives is carried out in the company oil mill within six hours of harvesting, using a continuous cycle crusher with cold extraction, in order to maintain the organoleptic properties of the extracted oil unchanged. The oil is stored in stainless steel containers in the absence of oxygen and in rooms at a controlled and constant temperature. These precautions make it possible to maintain the olfactory, healthy and taste properties of the oil unaltered.
