The L'Officina della Terra di Caruso Caterina agricultural company was founded in 2007 in Canolo, a small mountain town in the heart of the Aspromonte National Park, where the air and sun give life to high quality organic products. Caterina Caruso's family has always sown and harvested this cereal in the hills surrounding their company, as well as cultivating durum wheat which finds its environment in the lower hills of the Canola area. Dusting off ancient Calabrian recipes and traditions such as grandmother's dairy biscuits, San Martine, Sgute, Jauni, Stomatico, Sussumelle, Tarallucci, Friselle, bread biscuits, and much more.
The flagship is the Jermanu bread produced with only sourdough and flour from an ancient grain "u Jermanu" (rye) still cultivated by farmers in the highlands of Canolo, where thanks to the altitude and a harsh climate it is production favored.
